The Conservatory Bar has an exceptional Wine and Beer list and offers a little peaceful haven in the centre of Cairns on Lake St. Not only have they paid attention to detail to both their offerings for drinks and food they have a beautiful social and sustainable bent that we love.


Their social impacts include the fact that they donate $1 to The Golden Octopus Foundation, an organisation providing treatment opportunities to children in regional areas who are fighting cancer for every house wine sold through their Your Happy Hour!

Eco Impact 

  • Take all recyclables (bottles, glasses & tins) & donate their cash for cans to Headspace.

  • Not only successfully mapped their waste system in their own bar, but helped 20 other Cairns bars and are now collaborating with all other restaurants on the pier to also sort their waste.

Why - Their Sustainable Story

Ross Stevens is pretty passionate about Wine and Cocktails and providing a good night out for the people who frequent his establishments but noticed over time that he had a lot of waste that he knew was worth something to someone.  So, he has set up some systems in his bars to divert the waste to Cash For Cans, with 20 bars and restaurants in total now doing this they donate on average $400 a month to Headspace  Cairns.

Vision - The Future

  • Work with local businesses in Cairns City to collect the plastic containers that prepped foods come in and divert that from landfill.

  • Work towards getting Recycling Bins in downtown Cairns with Circular Economy FNQ's support so the restaurants in his cluster can divert their Wine and Spirit bottles from landfill as they are currently being collected by Rec Return who is their Containers For Change collector at a cost to his bottom line, we are looking at how that can be resolved through commercial pick ups as that glass is used by one of our members to lay new roadbase, so it is a circular resource that is not being sorted at the moment correctly by normal collections. 
  • A few of these Restaurants in this cluster will be invited to come on board with the FOGO Bin trial that CEFNQ are trialing in our Circular Business Transition Pilot every August, to get one step closer to becoming a Zero Waste Business.  #zerowastebusiness
